Vanilla Muffins

Here’s a simple and delicious recipe for 12 Large Vanilla Muffins. These muffins are light, fluffy, and packed with classic vanilla flavour.

Vanilla Muffins (Makes 12 Large Muffins)

Cook Time: 20-25 minutes

Yield: 12 muffins

Ingredients

• 300g plain flour

• 2 tsp baking powder

• 1/2 tsp bicarbonate of soda

• 1/4 tsp salt

• 150g caster sugar

• 2 large eggs

• 240ml milk (whole or semi-skimmed)

• 120ml vegetable oil (or melted butter)

• 2 tsp vanilla extract

• Optional: 50g white chocolate chips or sprinkles for extra sweetness

Instructions

1. Preheat the Oven: Preheat your oven to 200°C (180°C fan) / 400°F. Line a 12-cup muffin tin with muffin cases.

2. Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, bicarbonate of soda, salt, and sugar.

3. Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract until smooth.

4. Mix Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry ingredients. Gently fold the mixture with a spatula or spoon until just combined. Be careful not to overmix; the batter should be slightly lumpy.

5. Fill the Muffin Cases: Divide the batter evenly among the 12 muffin cases, filling each about 3/4 full. If desired, sprinkle the tops with white chocolate chips or sprinkles.

6. Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and a toothpick inserted into the centre comes out clean.

7. Cool: Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
